  • 3 oz. thinly sliced roasted turkey breast
  • 4 slices of extra sharp aged white cheddar
  • 1 small, vine-ripened tomato, sliced
  • 2 cups tender baby spinach leaves
  • 2 tbsp honey mustard or Dijon mustard
  • 1 tbsp avocado oil or olive oil

Method
 

Step 1: Preheat Your Oven
  1. Preheat your oven to 400°F (200°C). A hot oven ensures that your Croque Monsieur comes out perfectly crisp on the outside while still being gooey on the inside.
Step 2: Assemble Your Sandwich
  1. Take one slice of bread and spread a tablespoon of honey mustard evenly over one side. Layer with half the cheese, followed by the turkey, tomato slices, and a handful of baby spinach. Add the remaining cheese on top and finish off with the second slice of bread, spreading the other tablespoon of mustard on one side.
Step 3: Heat the Oil
  1. Next, heat the avocado oil in a skillet over medium heat. A good non-stick pan works wonders here. Once the oil is hot, carefully place your sandwich into the skillet.
Step 4: Cook Until Golden Brown
