Ingredients
  

  • 2 lb chicken winglets 910 g
  • ½ cup all-purpose flour 60 g
  • ½ teaspoon sea salt
  • 1 teaspoon garlic powder
  • ½ teaspoon black pepper
  • Oil, for frying
For the Honey Garlic Sauce:
  • 5 tablespoons honey
  • ½ cup soy sauce 120 mL
  • 1 tablespoon unsalted butter
  • 1 tablespoon minced garlic
  • 1 tablespoon fresh grated ginger
  • 1 tablespoon brown sugar
  • 1 teaspoon toasted sesame seeds
  • 1 teaspoon rice vinegar
  • 2 tablespoons sliced scallions for garnish

Method
 

Step 1: Prep the Chicken
  1. Begin by rinsing your chicken wings under cold water. Pat them dry with paper towels. This step is crucial for achieving crispiness. Once dry, place your wings in a large bowl.
Step 2: Season and Flour
  1. Sprinkle the sea salt, garlic powder, and black pepper over the chicken. Toss to coat. Next, add the flour and mix well until each wing is evenly coated. The flour forms that perfect crispy layer when cooked.
Step 3: Heat the Oil
  1. In a large skillet, pour enough oil to cover the bottom generously—about half an inch will do. Heat it over medium heat until it shimmers. To test if it’s ready, drop a small piece of bread into the oil; if it sizzles, you’re ready.
Step 4: Fry the Chicken
  1. Carefully place the coated wings in the hot oil, making sure not to overcrowd the pan. Fry them for about 7-10 minutes on each side, or until they’re golden brown and crispy. Don’t forget to turn them halfway through for even cooking.
Step 5: Prepare the Sauce
