Ingredients

  • 4 fresh haddock fillets
  • ½ cup finely grated Parmesan cheese
  • ½ cup crunchy panko breadcrumbs
  • 1 tablespoon dried parsley flakes
  • 2 teaspoons dried dill weed
  • ½ teaspoon sweet paprika
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • 1–2 tablespoons mayonnaise adjust based on fillet size
  • ½ teaspoon Dijon mustard adds a mild tang
  • 1 teaspoon lemon zest brightens fish flavor
  • 1 tablespoon extra-virgin olive oil
  • ½ teaspoon garlic powder to keep it subtle
  • Lemon wedges, for serving

Method

Step 1: Prepare the Haddock Fillets
  1. Start by rinsing the haddock fillets under cold water. Pat them dry with paper towels. This helps the coating adhere better.
Step 2: Make the Coating Mixture
  1. In a mixing bowl, combine Parmesan cheese, panko breadcrumbs, parsley flakes, dill weed, sweet paprika, salt, and pepper. Stir these ingredients until they’re well mixed. This delectable coating will give the fish its crunch.
Step 3: Prepare the Wet Mixture
  1. In another bowl, blend mayonnaise and Dijon mustard. Add lemon zest and garlic powder. This will bind the crumb mixture to the fish while imparting extra flavor.
Step 4: Coat the Haddock
  1. Using a brush or your hands, apply the mayonnaise mixture generously over each haddock fillet. Once coated, dip each fillet into the breadcrumb mixture, pressing down to ensure the crumbs stick.
Step 5: Preheat the Air Fryer
  1. Set your air fryer to preheat at 400°F (200°C) for about 5 minutes. Preheating ensures even cooking and a perfect crispy crust.
Step 6: Cook the Haddock
  1. Arrange the coated fillets in a single layer in the air fryer basket. Avoid overlapping, as this ensures even cooking. Air fry at 400°F for about 10-12 minutes, flipping halfway through for an even golden finish.
Step 7: Check for Doneness
  1. Use a fork to check if the fish flakes easily. If so, it’s ready! If it needs additional time, air fry for another 2-3 minutes, monitoring closely.
Step 8: Serve and Enjoy
  1. Once cooked to perfection, serve your air fryer haddock with lemon wedges. The fresh squeeze of lemon brings everything together.

Notes

Here are a few tips I’ve gathered from experimenting with this recipe:
  • Use Fresh Haddock: For the best flavor and texture, choose fresh fillets rather than frozen.
  • Adjust the Seasoning: Everyone has different tolerances for spices. Feel free to adjust amounts to suit your palate.
  • Experiment with Coatings: Try swapping out panko breadcrumbs for crushed cornflakes for an even crunchier exterior.
  • Don’t Crowd the Basket: Cooking in batches, if necessary, can make a significant difference in crispiness.
  • Keep an Eye on Cooking Time: Depending on the thickness of the fillets, cooking time may vary. A meat thermometer should read 145°F (63°C) for fully cooked fish.
